Hello lovers! I have a fantastic recipe for you today! I know I know-a second post this week? And a recipe post no less! Woohoo! I am finally getting a grasp on the craziness that life has been recently and have been a bit more organized (and motivated!) for blogging!
I have been so in LOVE with plantains recently thanks to the Plantain Queens Michelle and Lori. I have made their plantain bread- plain and a protein version- so many times over the past few weeks. And I just recently devoured their cinnamon sugar bites. SO freaking good! Well I had some over ripe plantains that needed to be put to good use. So I got to thinking- plantains are similar to bananas, why not make a plantain bread ala banana bread? Add in some chocolate chips (because chocolate chips make everything better, no?) and BOOM- amazing chocolate chip plantain bread was born!
And a sweet bonus for you- it has NO flour, NO oil, NO dairy and NO refined sugar (well, except for the chocolate chips, which you can omit but really, why would you want to?)
Without further ado, I give you an amazingly moist (he he sorry) and healthy plantain bread!
- 1 cup oat flour
- 3/4 cup old fashioned oats (not instant!!)
- 2 ripe plantains (yellow)
- 1/4 cup Truvia
- 1/4 cup almond butter (I used Justin’s vanilla almond butter)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/3 cup almond milk (I used unsweetened vanilla)
- ½ cup chocolate chips
- 2 T-1/4 cup apple butter
- 2 eggs
- 1/4 canola oil or applesauce
- 1 tsp vanilla
- 1 tsp cinnamon powder
Preheat oven to 350 degrees and grease a loaf pan (I used coconut oil spray).
Place peeled and roughly chopped plantains in a blender and pulse a couple times to break up the plantain. Add eggs, almond milk, apple butter, vanilla, almond butter and puree.
In a separate bowl, mix the baking powder, baking soda, truvia, oats, oat flour and cinnamon. Add your plantain puree to dry ingredients and mix until just combined. Fold in chocolate chips.
Pour the mixture into your greased loaf pan and bake for 40-45 mins until a toothpick comes out clean. Let cool before slightly slicing and devouring it’s fantastic still warm from the oven with the melty gooey chocolate chips! Even the bf approves- and he hates both bananas and plantains! (weirdo!)
